Gluten-Free Banana Bread Recipe Recommendation! 🍌
Since I hate food waste, if there are some sad looking bananas on the side, I will find a way to use them up, even if it means making yet another banana bread.
Quite a few recipes contain quite a bit of added sugar, as well as butter and white flour. While I strongly believe that there is a place for all foods in our diets, I also like to think about how to keep my energy levels consistent through the day, and not eat things that give me energy for about five minutes and then lead me into a bit of a slump (and ultimately craving more sugar).

This recipe is a bit different, because it contains chickpeas! And no, it doesn't taste at thing like hummus! Chickpeas add a source of protein to the loaf, and the seeds and walnuts add a good source of healthy fats. For that reason, I don't get a sugar high or slump after eating this.
I followed the recipe and made a few adaptations - I left out the coconut sugar (as I find the overripe bananas sweet enough). I also added a teaspoon of cinnamon and sprinkled the top with walnuts, sunflower seeds and pumpkin seeds. It's great spread with nut butter or just as it is, when it's still warm from the oven.
