Apple Choc-Chip Cookie Dough Bites Recipe!

Sometimes we need a little pick me up!


Quite a lot of energy balls and bars that you find in the shops are made with a large amount of dried fruit, which is pretty high in sugar. I have nothing against dried fruit in moderation, but I wanted to create an energy bite that was a bit more balanced, was packed with lots of affordable ingredients (often found in the store cupboard), and could be made in one bowl without any dates, equipment or blenders in sight!




Serves: Makes approximately 5 golf-sized balls Time required: Approximately: 15 minutes INGREDIENTS 1/2 cup porridge oats (they need to be fine in texture, not rolled oats) 1/3 cup of drained chickpeas, mashed up 3 tablespoons of Apple Sauce from a jar (or homemade stewed apples) 1 tablespoon of dark chocolate chips (or finely chopped dark chocolate) 1 tablespoon of nut/seed butter of your choice (optional) 1 tsp cinnamon 1-2 tsp honey or maple syrup, to taste To coat the bites: 1 tablespoon of chia seeds or 1 tablespoon of desiccated coconut or 1 tablespoon of cacao powder (You can also do a mixture of toppings!). METHOD 1) In a bowl, mash the chickpeas with a fork 2) Stir in oats, cinnamon, apple sauce, honey or maple syrup, chocolate chips, nut butter (if using) and mix well into five balls. It's quite a wet mixture, but if you feel like it's too wet, add in another sprinkling of oats. 3) Spread the coating (s) of your choice on a small plate and roll the balls in the coating 4) You can eat straight away, but ideally refrigerate for a few hours! Enjoy!

Tip: You can also freeze these balls, and defrost for a few minutes before eating for a quick pick me up!
